Ingredients:
- 255g butter
- 255g plain flour
- 140g cornflour
- 140g icing sugar
- 28g of extra butter, to be added at end
Instructions:
1. Preparation:
- Put all the ingredients except for the 1oz of butter into a food mixer or processor. This can also be done by hand, but will take longer.
- Mix until the shortbread mix resembles fine breadcrumbs.
2. Bringing it all together:
- Add the final 1oz of butter, which will bring the mixture together into a ball.
- Wrap the dough in cling film and chill in the fridge for 30 minutes.
3. Baking:
- Preheat your oven to 160°C fan, 180°C conventional, or gas mark 4.
- Roll out the dough to your desired thickness and cut into rounds or fingers.
- Place the shortbread on a baking tray lined with parchment paper.
- Bake for 17 minutes or until the shortbread begins to turn golden on the edges, depending on your oven.
4. Finishing touches:
- Once baked, sprinkle the shortbread with a generous topping of sugar while it is still warm.
- Allow the shortbread to cool completely before removing from the tray.
