Slow Cooker Chicken Stew Recipe

 Indulge in the ultimate comfort food with my Slow Cooker Chicken Stew recipe. Made with tender chicken, hearty vegetables, and a rich broth, this easy-to-make stew is perfect for a cosy night in. Add some dumplings for a truly comforting meal that will warm you up from the inside out.



  1. Ingredients:

    • 2 tablespoons olive oil
    • 1 & 1/2 pounds chicken thighs or breast cut into pieces
    • 5 tablespoons plain flour
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • 1/2 teaspoon salt, plus more to season
    • 3 cloves garlic, minced
    • 1 onion, diced
    • 3 carrots, peeled and sliced
    • 2 large potatoes, cut into 1/2-inch cubes or a can of drained  new potatoes
    • 750mls made up chicken stock (made with 2 Knoor stock pots)
    • 1 bay leaf
    • 120mls cup milk
    • 1 cup green peas, frozen
    • Black pepper, to season

    Instructions:

    1. In a large bowl, combine the flour, thyme, rosemary, and 1/2 teaspoon of salt. Toss the chicken pieces in the flour mixture until evenly coated.

    2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes.

    3. Transfer the chicken to the slow cooker and add the garlic, onion, carrots, potatoes, chicken stock, and bay leaf.

    4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.

    5. About 30 minutes before serving, you stir in the milk and green peas. Season with salt and pepper to taste and add your dumplings

    6. Once cooked remove the bay leaf 

    7. Serve the stew & enjoy!
