Sticky Toffee Pudding Recipe

Ingredients:
- 225g stones dates
- 175mls boiling water
- 1 teaspoon of vanilla
- 85g butter
- 140g soft brown sugar
- 2 medium eggs
- 2 tablespoons black treacle
- 1 teaspoon bicarbonate of soda
- 175g self raising flour
- 100mls milk
- 100g butter
- 125g soft brown sugar
- 1 tablespoon of black treacle
- 300mls of double cream
Instructions:
- Put the dates in a bowl and pour over the boiling water, then leave to soak for 30 minutes.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the black treacle and mix until well combined.
- In another bowl, combine the flour and bicarbonate of soda.
- Gradually add half of the flour mixture to the butter and sugar mixture, followed by half of the milk.
- Repeat with the remaining flour and milk, mixing until just combined.
- Fold in the soaked dates, being careful not to overmix.
- Pour the batter into a lined baking tin and bake at gas mark 4 / 180°C / 160°C fan for 25 to 30 minutes, or until a skewer inserted into the centre comes out clean.
- Put the butter in a pan on a low heat until melted, then add the sugar & treacle & cook for a further 1 minute until the sugar has started to dissolve.
- Add the cream & turn up the heat and bring to a gentle boil, carry on stirring for 1 to 2 minutes and take off the heat.
- That's it! your sauce is now ready.
