Choclate Fudge Cake

 Indulge in the ultimate chocolate experience with my decadent chocolate fudge cake recipe! Rich, super moist, and a true chocolate overload - this cake is a chocolate lover's dream come true. Serve it warm with a scoop of vanilla ice cream or drizzle some custard on top for an extra delicious treat. 


Cake ingredients:

175mls vegetable oil

3 meduim eggs

300mls sour cream plus 20mls milk

2 teaspoons vanilla essence 

1 tablespoon instant coffee disolved in 350mls boiling water( leave to cool)

320g plain flour

600g light brown sugar

135g cocoa powder

1½ teaspoons baking powder

1 teaspoon bi-carb

Chocolate Ganache:

450mls double cream

300g milk choclate

100g plain chocolate

Tin size 10 x 14 

Cook in a pre heated oven,170c fan for 50 to 55 minutes


Method:

Put all the cake ingredients in a large bowl, mix for about 2 minutes until smooth.

Greace & line the bottom of the tin with parchment paper, and cook as instructed, once cooked leave for 5 minutes.

For the ganache, heat the cream until hot but not boiling, pour over the chocolate and mix well until melted.

Pour ontop of the warm cake and leave until cold enough to put in the fridge.

This cake can be eaten cold, but is best served warmed up in the microwave for a minute or 2, I like mine with vanilla icecream but you can serve it with custard too.

This cake is huge and will serve 14 - 18
